Override VPT

On my RS 2116, I have VPT set to my Sony home theater system. Because of the way my antenna and SAT are configured, I need to use the TV speakers when I'm using the antenna. Is there some way I can override VPT so I can use the remote to control the TV speaker volume when using the antenna?

Yes, the best way to do it is with the Extender which gives you greater control over the HT settings in general.
Another way is with this special protocols spreadsheet using the VPT changer protocol at jp1 in the
Special protocol folder

Yet another way (and maybe the easiest) is to use Keymoves for Vol+, Vol-, and Mute in the given mode.

You got that right. These extenders can eat you alive especially when you get down to just minor problems.
