I downloaded Pl file for Limesat Ultra here-

Could someone please tell me what I press to change to the channels from a particular satellite channels for the Limesat Ultra Remote ?

Just read the instructions, it tells you in there (Custom 10)

The functions covered in the instructions are the only ones that were in the database I'm afraid
